The mallam at our street corner never measured anything — the yaji lived in a calabash and the recipe lived in his hands. This is the closest I've come to that newspaper-wrapped magic.
How to make it
- Slice beef paper-thin and thread onto soaked skewers.
- Rub generously with yaji, pressing it into the meat. Rest 30 minutes.
- Grill hot and fast, turning once, brushing with a little oil.
- Dust with more yaji straight off the grill.
- Serve with sliced onions, tomatoes and a cold drink.
