Real party jollof needs the 'taste of firewood' — that smoky base note you only get by letting the bottom layer catch just a little. My aunt guarded this recipe for twenty years; the secret is bottled here, minus the argument about whose jollof is best.
How to make it
- Blend tomatoes, scotch bonnets and onions into a smooth pepper mix.
- Fry the mix in palm oil until it darkens and the oil rises to the top.
- Stir in washed rice, stock and seasoning; cover with foil then the lid.
- Cook low and slow — let the bottom just catch for that smoky party flavour.
- Rest 10 minutes off the heat, fluff, and serve with fried plantains.
